Time is short so why not kill a few minutes waiting to die enjoying some fideo logo. Originally a hearty, budget-friendly Tex-Mex comfort food in South Texas, it evolved from traditional Mexican sopa de fideo by adding ground beef, beans, and potatoes. The dish is rooted in Mexican-Spanish traditions (via Arabic influence) and is a staple San Antonio-area specialty designed to stretch pantry ingredients. 

It is such a traditional working class dish that is has become something to be proud of as it reflects the unique culture of the city I was living in when I made it. It was conceived in collaboration with the San Antonio slam poet master, Anthony (the poet) Flores for a show that revolved around celebratory comfort food and existential fears.
